The United Nations defines sustainability as “meeting the needs of the present without compromising the ability of future generations to meet their own needs.” Many people who hear the word “sustainable” think “environmentally friendly”, but sustainability also takes economic and social factors into consideration. So how does food effect the environment, the economy, and the well-being of others?
- Food is one of our biggest ongoing expenses at home and can greatly affect our physical health.
- Standard practices within the food industry have resulted in deforestation, as well as the mistreatment of humans and animals.
- There is a significant carbon footprint produced throughout the food supply chain, and from food wasted on the consumer side.
The recipes and tips you will find on this website support a plant-based diet, which has the lowest carbon footprint, is one of the healthiest diets, and can be achieved inexpensively. I will provide information on the relevant environmental and social impacts of the various ingredients included in my recipes, and how to avoid supporting such impacts. As a bonus, I will also provide tips on how to reduce food waste.
Welcome!
My name is Rachel and I’m an environmental engineer who is obsessed with food. Over the last 15+ years I have spent countless hours researching and experimenting, determined to create meals that are well-balanced, full of flavor, and cause the least amount of harm to animals, people, and the environment. I created Sustainable Eating as a way to share what I have learned with those who are interested.
